Bill’s is a British restaurant group founded by Bill Collison in 2001, originating from a small greengrocer in Lewes, East Sussex.

The menu features all-day brunch every day, including bottomless pancakes (3–5pm), seasonal specials, and set-menu dinners available year-round. Dog-friendly dining is also offered, with a dedicated dog menu available for four legged guests.
